The average 3 inch oyster filters about 50 gallons of water a day.
The taste of the sea as just about everyone says, but different Oysters from different places all taste slightly different as they are affected by the local seawater, microorganisms in the water and so on. The Oyster have a very subtle flavor and only need the slightest touch of vinegar.
